in the second video http://tv.adobe.com/watch/learn-illustrator-cs5/gs04-creating-files-for-print it talks about how to use there main document sizes and there custom sizes and how to use there print size menus. the video also discusses how you can change the bleed options. bleed is when you change how the pint setup is for an example if the business card you are printing is a full colored paper then you bleed use the bleed settings so you don't get any white spaces on it which can be very annoying and can effect your design but with bleed it prints to the end of the paper
